Baby Yellow Potato Bake

I'm obviously on a potato kick...

I talked to all of you about my Rosemary Potatoes last week, and tonight I made the most delicious recipe, I had to share!

Baby Yellow Parmesan Garlic Bake

1 Bag Baby Yellow Potatoes Halved              

Juice of 1 Lemon                                           

Fresh Garlic 

1 T. Sea Salt

1/2 Cup Butter Melted (I used olive oil)

3 T Parmesan Reggiano

Wash and Cut Baby Yellows In Half. Place in an 8x8 Baking Pan.

Melt the Butter. To the Melted Butter Add Garlic, Salt, and Lemon.

Pour Melted Mixture Over the Potatoes. Stir so Potatoes are Covered.

Cover Potatoes with Parmasean. Bake Covered at 350 for 30 minutes.

Remove Cover and Bake for 10 additional minutes.

I confess that I'm dying to win the fabulous Sweet Clover giveaway from my friend NA over at Miss Southern Prep...because I've already planned a few outfits around the stunning necklace.

I confess that after one of the girls I clerk with said the work "Hunker" and I really really realy dislike that word.

I confess that I've been playing Words with Friends for quite awhile, and just realized that there is a strategy aspect to the game. #whoops

I confess that I'm seriously contemplating a cleanse or juice fast for a few days next week (any suggestions or tips ?)

I confess that I am so excited about my birthday dinner with my girlfriends tonight...and that my birthday was really just a good excuse to hang out with all my favorite ladies :)

I confess that I made these last weekend...and I had so much fun, I'm doing more this weekend!!!

I confess that I just emptied out my purse and found 8 lipglosses at the bottom--and a handful of chocolate.

I confess that I saw this on pinterest today and couldn't stop laughing!!!

Rosemary Potatoes

Its getting cold where I live. The type of cold that makes me want to eat warm food...comfort food. However with my lackluster cooking skills, the described food has to have an easy to follow recipe. But the other night I went recipe-less rogue, and made a delicious dish...which will definitely be a new staple this fall/winter...Hopefully it's something that might become one of your new favorites as well!!!

1 (Small) Bag Baby Red Potatoes        Olive Oil

Sea Salt                                                          Pepper

Rosemary                                                      Fresh Garlic

Preheat Oven to 450. Grease a pan (I used a baking sheet) lightly with olive oil. (I love using Trader Joes Olive Oil considering the quality you get for the low price). Wash the potatoes and cut into quarters (shown in the picture), then place into a bowl. 

Once in the bowl, pour a generous (1/4ish cup) amount over the potatoes, then "toss" the potatoes ensuring they're all covered. Season with Salt and Pepper--Since I have grinders for both--I did about 6 twists for the pepper and 10 for the salt--Repeat the "toss" again ensuring the potatoes are evenly covered. Crush garlic and toss (I used 3 small pieces from a full clove)... Finally add a generous amount of Rosemary and Repeat the "toss."

Bake at 450 for 32-37 minutes. Enjoy!!!

T.G.I.F. Friends!!!

I'm baby-sitting all weekend...and I don't think I could be anymore excited about what I have planned =D Pumpkin Patches, Movies, the Zoo, Cheering at Youth Sports, and Just Hanging Out with my favorite kids sounds like the perfect weekend to me!

Here are just a few of my latest favorites (or downright obsessions)

MiO Liquid Water Enhancer (available at your local grocery stores and gas stations). I know I've whined talked to all of you about the fact that I don't like plain water in any way, shape, or form! So far my favorite flavors are the lemonade, fruit punch, and strawberry watermelon...It makes getting in my 8 or 10 glasses a day, so easy and delicious. 

Laura Mercier Babydoll Lip Glace. I recently stumbled on to this at Sephora, it was more than I would usually spend on a gloss, but after wearing it for the past couple weeks...I have to say, it was worth every penny! I love the light,  non sticky texture, the sweet scent (and kinda cupcake taste), and the color. Oh! I could go on about the color all day. I've been wearing it by itself, and over the Balm lip stain this past week--and love how it makes my lips look so much fuller, glossier, and stays on for hours!

Dr. Jart+ Premium Beauty Balm (BB Cream) I don't like Foundation...Tinted Moisturizer tends to make me "shiny..." And then thanks to Birchbox (you can Join Here)

Hershey's Almond Joy Pieces In the spirit of Halloween Candy you're not supposed to share with anyone but yourself--I thought I'd tell you about my latest addiction. Omgosh, Omgosh, Omgosh...So So So good, crunchy, coconutty, sweet, and delicious. The only problem is the addictive quality ;)

Quick Hello!

Fall Break isn't quite over... If I had my way it would be Fall (or Winter, or Spring, or Summer) Break, Everyday!

S and I just got back from a few days in Laguna. It was so relaxing, sunny, and so much fun...  All we did was eat, sleep, eat, shop, eat, and play in the ocean. It was a perfect (and much needed) getaway--I was on Cloud 9 the entire time!

I made this recipe last night (instead of unpacking or doing laundry)

Talk about quick, easy, healthy (yay Superfood), and delicious. It definitely is my new side dish staple!

The rest of my day isn't too exciting: working, working out, outlining, unpacking/laundry, sleeping...and packing for a long weekend of baby-sitting my favorites =D

Weekend Recap

Happy Short Week Friends!!!

Sorry I've been MIA for the past month. I've had some personal stuff and pretty major family health matters going on--and today I finally woke up and felt like "Emily" again...

This weekend, I stayed really busy spending lots of time with friends and family--so instead writing the longest post ever--I figured I'd just show you some pictures from the past few days!!!

Friday Night EH and I grabbed dinner at an Asian Fusion Restaurant... 

We may have ordered the most obnoxious drink (yes that's a flame coming out of the middle) on the menu...which garnered quite a bit of attention.

On my way home from dinner, I met up with RW and (another) EA to see her new apartment, and for a cocktail (which turned into some quality people watching).

Saturday Morning RW and I braved the 35 degree weather to go to the Farmer's Market. I hadn't been all season, and wanted to make it once before next summer! I bought some delicious grape tomatoes, pumpkin chocolate chip bread, and a coffee to hold because my hands were SO COLD!!!

On Saturday Afternoon, my Aunt and I decorated pumpkins together, I didn't think I could have anymore fun crafting--but then she introduced me to Rumchata while crafting =D

Sunday was a baby shower for my Sister-In-Law! I am so excited to be an Aunt--and can't wait to meet the twin boys in December!

Thanks for putting up with my long post (I promise I left out lots)--I've missed blogging and all of my blog friends!
