It's Okay Thursday...

It's Okay 

...that I just realized (at 6.30pm) that it's Thursday...

...that I haven't blogged since I started school (I'll try to be good over the long weekend)...

...that I've become obsessed with myFitnessPal (follow me EHA73145) and look anything and everything up (even the extra shot of espresso I just added to my Sbux)... say "No" to a lot of things I would have said "Yes" to a few months ago to keep my sanity...

...that I've been taking it easy at the gym so my fractured ribs can heal...

...that I've been daydreaming about frozen margaritas after I worked out this morning...

...that I don't have any 'concrete' plans for the Holiday Weekend, and I couldn't be happier about it...

...that I'm planning on eating some PB2 as a snack tonight...

Since It's The Thing To Do...and because I wasn't sure what to Blog about today...I figured I'd join the "Currently" Post Party

Loving: Biking, Baking, and Clerking.

Reading: Just finished all of the 50 Shades, the Dragon Tattoo trilogy, and since school is about to start--I have a few textbooks to peruse for the next few months.

Watching: Lost. (we've made it halfway through season 3 so far--I don't think my goal of all 8 seasons by the end of the summer is attainable) Breaking Bad and Weeds

Anticipating: Wine Country Trip to visit my longest friend Morgan and her hubby Brent...and to drink copious amounts of wine and eat copious amounts of food.

Banana Bread

I made Banana Bread this weekend. Actually I was cleaning and almost ready to take a long nap when I noticed the bananas on the counter were looking ‘questionable…’ Normally I would have immediately thrown them away (especially with a nap on my radar), but it was a cooler (mid-80s) day than normal—and I had been in the mood to bake since Friday…Banana Bread seemed like the perfect solution. 

I found my recipe from Food Network...but made a few tweaks:

1 cup Granulated Sugar
8 Tablespoons Butter (I used the Land O' Lakes Brand--Whipped instead)
4 egg whites
4 medium ripe bananas
1 Tablespoon Skim Milk
3 teaspoons ground cinnamon
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt

1) Preheat the oven to 325
2) Mix the Sugar and Butter until light and fluffy--add egg whites one at a time.
3) Mash Bananas together--mix in milk and cinnamon--add to the sugar mixture, and stir until combined.
4) Add in the dry ingredients and mix until the flour disappears
5) Pour batter into a greased loaf pan (or two)...and bake for 65 minutes

What surprised me the most--other than the deliciousness level--was how easy this was to make :) What's your favorite quickbread to make?

Friday Faves


The weather in the Middle of America is hot, humid, and dry. Gross.
So I'm planning on being poolside (cocktail in hand), on the golf course, or in a temperature controlled environment all weekend long.

The only downfall of these delicious drinks is their size (8oz) and the calories (220). Regardless, they're worth trying (and mildly addictive). 

My New Bike

(It's the white one...and I love it so so so much).
I had always been told to switch from my mountain bike to a road bike, and I'm glad I finally listened to reason and did. It's completely changed my perspective about biking (for the better), improved my workouts, and it's just so stinkin' cute!

The Balm "Stainiac"

I was hesitant to try this product, but after using it for the past few weeks, I'm sold.  I put it on in the morning (I just use it on my lips), and don't think about reapplying it until when I leave work for the day.  My favorite part about this product is that it blends in seamlessly with the natural summery look.

Summer Blog Break

I think if there was an award for inconsistent summer blogging, I would win it...and if not win it, at least be a strong contender.  And as much as I wish summer could last all year long,  it's August again (18 days til my 3rd and LAST year of Law School Starts). So it's back to regular blogging, or at least blogging more than once a week!
